Update categorisation script

Hi @fmausolf would it be possible to update the categorisation script https://gitlab.cern.ch/HiggsDNA-project/HiggsDNA/-/blob/master/scripts/categorisation.py?ref_type=heads with the recent improvements? That would be great!
