Allowing pixel detector manager to have its name set

Allowing a name other than "Pixel" to be used, so that we can distinguish "ITkPixel" through its DetectorManager name. Needed for !37861 (merged)

Also cleans up implementation of same functionality for SCT_ReadoutGeometry.
