Adding new flavour tagging and muon variables to PHYSLITE

James Catmore requested to merge jcatmore/athena:master-update_PHYSLITE_run3_1 into master

This MR adds the new DL1dv00 and DL1dv01 to the flavour tagging variables in PHYSLITE, along with the CaloMuonScore variable to AnalysisMuons. These are needed by standard analyses. Changes have been applied to both the legacy and new configuration scripts for debugging purposes.
