Prep for version 2.0

• (Good to have) Testing job in pipeline #68 (closed)
• Changes to OTSDAQ burnin data (and README) #67 (moved)
• Get final git hashes from Lorenzo
• Prep a feature branch
• Test on FNAL hardware
• Submit a merge request from feature branch to a new branch called main. Set main as the default branch. Change all the branch protections, etc (any mention of master) to main.
• Submit a MR to upstream from main to main
• Change upstream default branch to main
• git tag the release as v2.0
• Migrate everything to the upstream (issues, change README to point to upstream, add scheduled pipelines, etc)
