Keep the CTP7 volumes in read-only mode during data taking

In the event of a sudden power loss, the major risk for a fast system recovery is a corruption of the persistent volume on the SD-Card. This risk can be avoided if keeping the volume in read-only mode during normal operations. The documentation and helpers tools should be adapted to re-mount the volume in read-write mode only when necessary.
