Upgrade XRootD from 5.6.1 to 5.7.1

We are running EOS 5.2.27 in production, and our CI is also using EOS 5.2.27. This version of EOS uses xRootD version 5.7.1, while we are still using 5.6.1. We should update our version as the newer versions contain numerous bug fixes.
