Remove init_pod script

With https://gitlab.cern.ch/cta/sandbox/ci_monitoring/-/merge_requests/2, we should be able to get rid of the init_pod script as we no longer need to mount the logs in a specific place.

With this, we have then removed all of the baked-in startup scripts and no longer do all of the pods need to run in privileged mode.
