Enable opentelemetry RPC metrics on the gRPC frontend

gRPC can natively expose some metrics already. See https://grpc.io/docs/guides/opentelemetry-metrics/. @kskovola could you look into enabling this and see how this behaves? For now it's not very urgent, but we should have this before putting the gRPC into production.
