stargz: define image in values.yaml

To be able to create the tn release with the procedure which replaces registry.cern.ch with registry-tn.cern.ch, we need all images defined in values.yaml of cern-magnum.

@rbritoda Do we want stargz available in the TN deployment for this release (2024-Q2-2)?
