Replace current README with trivial one linking to the Sphinx site

It is better to do this asap and avoid having duplicated and potentially out of sync documentation.

If some bits from https://gitlab.cern.ch/lhcb-datapkg/AnalysisProductions/-/blob/master/README.md still need to migrate to the site, then please let us do that asap and finalise.
