CaloChallenge setup for planar calorimeters

I have prepared an extra configuration on top of the standard cylindrical calorimeter in !131 (merged) that changes the geometry of the calorimeter to be more LHCb-like. The positions and dimensions are not the same as in LHCb/ECAL, but I wanted to have sth simple as an intermediate step to see what else needs to be done to test this out in Gauss. Visualization of the simulation, performance of the inference with pyTorch & ONNXRuntime, as well as training datasets and monitoring plots are below.
