PanTau: set explicit energy calibration for input taus

Hello,

As in !40061 (merged) , if we want reproducible results when re-running tau reconstruction from xAODs, we need to set the input tau energy calibration explicitly, and not pick up the default calibration that is overwritten several times in the reconstruction. This MR does not change the reconstruction output.
