Update Digi config for CA-based Transforms

• Change Geometry to Enable in the flags that get set according to the ``Detectors``` specified
• Add ITk detectors to the possibilities for Digitization

Just a comment that this is probably not used anywhere and will be reworked in the future. Still, this fix is useful to have to make sure we don't forget about ITk.
