Update projects to LCG_101_ATLAS_8

Update projects to the new layer LCG_101_ATLAS_8. More details are discussed in https://sft.its.cern.ch/jira/browse/SPI-2042. The updates are:

  • coverage 6.2, pytest 6.1.1
  • madgraph 3.3.1.atlas1
  • Fixes for sherpa linking
