Change of TriggerEDM category for unconventional tracking collections from jet to UTT (ATR-26272)

After some discussion on ATR-26272, the categories of various collections belonging to the unconventional tracking signature are changed to the new category UTT. This change is not a change of the Trigger EDM but simply a re-categorization which is used by a script to estimate the size of each trigger signature group.
