AnalysisTop: Update validation CI scripts for mc20 and mc21

This MR updates the config files in AnalysisTop, specifically:

  • New validation and example config for Run-3 analysis
  • Update CI test scripts and new scripts for Run-3 CI (not yet activated in the CI tests)

The config files still use DL1r and DL1dv00 tagger, this will be updated in a separate MR along with bump of the FTAG CDI file to the latest version, which was not previously possible to due old derivation test files for the CI.
