Projects: update project versions to release 25

With the release branching completed, update the projects version in main as follows:

• Athena, AthSimulation, DetCommon, VP1Light: 25.0.0
• AnalysisBase, AthAnalysis: 25.2.0
• AthGeneration: 25.6.0

Even though there is some doubt about AthGeneration jumping from 23 to 25, let's go ahead with this. Can always be fixed if really needed before we actually build the first release.

OK, I will submit a new MR, to go back to 23.6 because we decided with PMG conveners that we want to stay in 23.6 ... and we plan to build a new release end of the week - just waiting for a new LCG layer and xAOD filters fix.
