Update PFlow Config From ESD

Mark Hodgkinson requested to merge atlas-particleflow-software/athena:mhodgkin_updatePFlowConfig_June2024 into main

This adds two updates to be used when running pflow reco from ESD(toAOD).

In the Run 4 detector an additional convertor is configured that allows to read ITK track data.

In all detector configurations additional metadata is added to the AOD such that we can create physval.root from the AOD.
