Enabling overriding of material map tag using defined geometry label

Noemi Calace requested to merge ncalace/athena:feat-override-tag-material-map into main

This MR allows passing a geometry tag label for the construction of the material map tag, while by default we rely on the geometry tag for its construction.

This is needed for ITk tracking studies with material variations.
