IDTPM: Fix validateJson.sh

Marco Aparo requested to merge maparo/athena:maparo-main-IDTPM-testJson into main

Following up from ATLASRECTS-8128, changing the validateJson.sh script:

  • not using wildcards, but rather explicit json file names
  • adding checks to ensure files and symlinks exist
