Documentation updates (2017.03.09.)

Spent a bit of time updating/extending the README.md files of the project.

Removed the Doxygen code from the repository, as the Doxygen documentation is now produced independently of this code anyway, and nobody was maintaining this since a while.

Also removed a CMake function that we've not been using for a very long time by now. (I just bumped into the function while doing the documentation updates, and didn't want to forget about it by the time I'd do my next update of the repository.)
