Process dict prepare_output_file.py more conventions

Update the process_dict in prepare_output_file.py with all possible conventions to allow users maximal flexibility, allows 2023 analyses

LONGTERM: Should not have such a complicated process dict but instead assign based on a function that checks for specific production mode strings and then assigns the output "key"
