Change definePlots signature

No real solution for combining multiple eras (see the discussion in #2 ), but for defining the plots the extra arguments (currently: sample name as in the yml and era) will be needed anyway (e.g. no systematics for data, loading the correct scalefactor/JEC payload), so I'm pushing these before anyone tries to implement more realistic analysis plots.
