Documentation about EOS tagged release triggering automatically an CTA CI test on the new EOS version

Update the CTA docs describing how is the trigger in CTA CI workflow setup between EOS and CTA projects.

This just means to mention in the docs that we have created an access token to our repo. The EOS project setup a webhook (containing this token) which will trigger a CTA CI pipeline on the main branch after every tagged version.
