Update Using EOS docs

• Fix various typos, spelling/punctuation/capitalization/grammatical errors, formatting errors etc. to generally make the documentation more readable.
• Restore some code blocks that were invisible (!) due to formatting errors
• Some odd standalone phrases seemed like they were meant to be section headers so I made them section headers
