Rename the GEM_AMC node to GEM

As discussed privately, this MR aims at renaming the GEM_AMC node into GEM for simplicity. Both the XML address tables and Python scripts have been modified.

In addition, some more changes were introduced (as separate commits):

  • The outdated Project Name: headers have been cleaned up from the VHDL files.
  • The GEM_AMC enum has been renamed to GEM

The address table name and external entities statements have not been renamed since the side effects are not yet clear to me.
