Add all three purity rz plots to eval_utils.py

• Modify the purity plot function to include both Berkeley's purities and L2IT's. This needs careful review to make sure correctness of defitions.
• add optional flag --checkpoint to core/evals.py to allow specifying a checkpoint, instead of letting the program find it automatically
