Removed deprecated pip argument

Removed deprecated 2020-resolver option from pip, which was causing dependencies installation to fail.

Also fix the version of Python taken from lb-conda to one that is compatible with the versions specified in https://gitlab.cern.ch/lhcb-core/nightlies-jenkins-scripts/
