Update docs for MooreAnalysis!81

Goes with MooreAnalysis!81 (merged) (which is waiting for Allen!850 (merged) and !1542 (merged), marked as draft accordingly), please see description there.

I also take this opportunity to update some of the plots and printouts, since HLT1 has improved recently.

@rjhunter while you're at this, would you mind fixing the unfortunate choice I made as to the figure size on https://lhcbdoc.web.cern.ch/lhcbdoc/moore/master/design/goals.html? It's probably a factor 2 too big for the resolution of the image.
