Fix building of documentation

Rosen Matev requested to merge fix-docs into master
  • Fix custom python environment for sphinx docs
  • Be a bit more verbose when making docs
  • Do not install graphviz but take it from LCG and switch to lhcb's docker images (which come with HEP_OSlibs)
  • Switch to LbEnv-stable
  • Add some missing copyright (that escaped the automatic check)
