initial updates to GeoModelXML docs

Documentation for GeoModelXML.

Some sections are not yet filled in, but they are put in place to show what should probably be there. Others are fairly complete.

Quite a bit is based on slides written by @ncalace for the tutorial days.

EDIT: To-do, where to describe "envelope" mechanism...

Hi @nstyles, unless there are any comments from anyone on this MR, I think we should go ahead and merge it.

Side comment, not related to these changes: it proves one more time that our build_geomodel_athena CI job is quite fragile. I've seen it failing many times in the past. A manual restart usually helps. Let me do it again here, just as a proof of principle.

This should now be reasonably complete. The Troubleshooting section is still very light, but I anticipate that will anyway being quite "dynamic" as bugs are found and solved

The build_geomodel_athena job succeeded after merging. However, the docs-deploy failed ...

Let me tag @rbianchi and @mbandier to make sure they are aware of this. I suspect we'll see the same behavior with Nick's latest MR !310 (merged)
