Revert "CI: pin version for EOS deploy image"

According to INC3244562 this is fixed now. Guess only one way to find out...

This reverts merge request !866 (merged). I'm too lazy to revert !877 (merged), as it does not really matter that much and we move to v3 soon anyway.
