Add n_tracks to single-btag-variables, update docs

• add n_tracks variable to single-btag-variables.json (corresponding to the default track selection - not the loose track selection. Do we need both?)
• update LeptonDecayLabel name in field descriptions to get this written in the variable docs
• add test-config-merge script usage to docs
