Documentation technical fixes

I noticed that something wasn't quite working right with the mkdocs page: the latex wasn't rendering properly and the mermaid diagrams weren't showing up. I don't know if this will fix it, but I found some other issues while looking.

Mostly:

• Weird whitespace in the mkdocs yamml
• Calling a script with sh which doesn't support some bash operations that the script used
