Open dataset: Reducing variables and including independent documentation!

Description

This MR contains the following information:

  • The OpenData.json config file has been modified to use a more reduced set of variables. See issue #142 with the discussion of which variables should be kept
  • I have also tried to add the description of the variables for the open dataset in the ftag documentation, see docs/data/open-dataset-field-descriptions.yaml.
    • I have not been able to test this part in my fork.
