Draft: Wrapping up variables and definitions for Open Dataset

In this MR, which requires further changes, I would like us to finish our selection of variables to be used for the open dataset and their definitions.

Description

The current list of variables and definitions can be found in the docs

I have added some missing definitions to docs/data/field-descriptions.yaml

The following variables still need definitions: matchedToTruthJet , ptFromTruthJet .

Furthermore, a more complete definition should be given to GN2v01_aux_TrackOrigin and GN2v01_aux_VertexIndex specifying what the different values mean.
