Clean up names for open dataset

This is another small change for the open dataset (#142) but also a long-overdue incremental change in the interest of clarity.

I'm renaming some of the track IP variables to make them more consistent with the other naming conventions we use. But more importantly, I'd like them to be not-wrong, ideally even not-misleading. The worst one was IP3D_signed_z0, which was confusing (what the hell is IP3D? Let's just forget that that ever existed) and also wrong (it was actually z_0 \sin \theta). There were others that are similar.

The real fix is in atlas/athena!76048 (merged) (since we'll eventually need to update the inference code too) but this should let us start the migration.
