Fix the current latex setup & adapt the syntax

I have fixed the latex setup that needs to be done for docusaurus, I have also adapted the syntax in all the files that used the wrong syntax which was e.g. \(x\) now it is just $x$ .

I will need to update the configuration of the latex plugins once we upgrade to docusaurus 3, but this should be very quick and easy.
