Fixes for ATLASVPONE-458 : missing Track and Calo plugins, after the move to CMake.

Edward Moyse requested to merge emoyse/athena:master-fix-missing-plugin-vp1 into master

This should add back the missing plugins - they weren't being compiled after the move to CMake.

I also added a bit clearer debugging information to VP1Gui to help track problems like this faster in future.
