Allow the user to replace inputs and outputs for DL2

Merged Dan Guest requested to merge dguest/athena:extend-dl2-replacers into 21.2

It turns out there's a pretty good use case for non-standard inputs and outputs for DL2. This makes the tool more configurable.

Not quite urgent but hopefully will be in by the next release.
