Move to newer versions of AMI tags for tests as standard (uses ATLAS-P2-ITK-22-02-00 instead of ITK-22-00-00, e.g. including new pixel ID scheme and NSW muon geometry).

Add -o flag to run the previous version of the tests.

NB this relies on either !34039 (merged) or !34036 (merged) so should not be merged before one of those is in.
