ITk Strip Sensitive Detector Config

Update config for ITk strip Sensitive detectors log vols, and add appropriate output stream. Allows ITk Strip HITS to be written out in a ComponentAccumulator based test job.

NB some already existing ITk-specific modules invoked still use "SCT" in the name. This should be fixed in a future MR.
