Update default values in mm digi and remove z-shift

This MR updates the MM digitization default values converging closer to their final state:

  • Peaking time is updated from 100 to 200 ns
  • Cross talk is updated from 0.2 to 0.3
  • Neighborlogic is switched off Furthermore, the artificial z-shift is removed from the code since the cause of the shift was found and resolved in !40920 (merged)
