Add a new option to allow the vertex collection name to be set from a config flag, and change the default vertex from the iterative to the adaptive multi vertex finder as discussed in ATR-23022, ATR-23018.

NB: this change might be expected to change the counts for the jets, bjets and MET slices in the tests.

(Leave as a WIP until we are ready to actually make the switch)
