Enable ITk Pixel sim and digi by default

Enable ITk Pixel sim and digi by default as they are now included in the geometry tag. The following changes have been done:

• update sensitive detector list
• support all chip types (SingleChips do not work in digi yet)
• set some ITk Pixel detector type for all (pending geometry updates)
• return RD53 module design based on detector type
• add basic RD53 implementation to PixelCablingSvc
• comment-out some non-working debugging code in RD53SimTool (we'd like to keep it for now)
• finally enable ITk Pixel in simulation and digitisation
