Cleanup Pixel, SCT and ITk geometry config (CA)

Cleanup Pixel, SCT and ITk geometry config (CA) and split it into GeoModel-only, simulation and readout geometries. All clients have been updated.

For tracking geometry I managed to clean it up a bit more, the rest can come in follow-up MRs. Many dependencies still appear to be incorrectly defined.
