Fix test_DataOverlay_MC16_Zmumu.sh (ATLASSIM-5587)

After !50854 (merged) the test_DataOverlay_MC16_Zmumu.sh test was failing in the ESDtoAOD step due to missing conditions overrides. The fix was to apply the same conditions overrides to the ESDtoAOD step as were already being applied to the RAWtoESD step.

NB This merge request only changes an ART script, so will have no effect on the CI output.
