Remove use of dictFromChainName function, rename the MET hypo gen function

The MET hypo generating function was poorly named and it's been on my list to fix this for ages. Fixing the MET part of ATR-24985 (shouldn't be using the dictFromChainName function except for tests) provides a good opportunity.
