Updated Jet PhysVal CA config

Fix issues reported for jets in https://its.cern.ch/jira/browse/ATLPHYSVAL-885 Upgrade validation

Namely:

  • sets reference collection to AntiKt4TruthJets for MC, to produce response plots
  • add leading and subleading jet plots
