ZDC analysis: Improved defaults for 2023 reconstruction, change default ForceLowGain to false

Fix a problem in 2018 (trigger) reprocessing due to ForceLowGain being set to true Do not force low gain for pp and PbPb 2023 Fix EM module config settings which were vestigially set to zero (from copy of LHCf config) Use const parameters for some settings in stead of hard-coding in loop Other improvements to configuration for pp2023 and PbPb2023
